We have a sweet tooth and you know it, of course. We have decided to share with you our favorite recipes. But it’s really because we love you! Here is our last find, just for you, our double chocolate muffins recipe, made with ROY “Parisian” chocolate tiles.

A Double Chocolate Muffins Recipe for All Gourmets
Try and do not resist, our double chocolate muffins are absolutely fabulous !

Ingredients for 20 Mini Muffins
- 125 g of “Chocolate Parisian Tiles” from ROY chocolatier, dark chocolate 70% with bits of caramelized hazelnuts or cocoa broad beans
- 50 g of “Chocolate Parisian Tiles” from ROY chocolatier, plain milk chocolate or milk chocolate with flower salt from Guerande
- 150 g of butter (preferably half-salt) (1/4 cup + a little less than 1/3 cup)
- 150 g of granulated sugar (1/4 cup + a little less than 1/3 cup)
- 3 big eggs
- 60 g of almond powder (a little more than 1/3 cup)
Muffins cups (20) or one big mold for 20 muffins, flexible silicone molds are ideal if not too thick.
Method for Chocolate Muffins
Break all “Chocolate Parisian tiles” into a heatproof bowl which will be sitting over a saucepan with simmering water. Add butter. Keep the heat low to allow chocolate to melt slowly, stir to obtain a smoothy mixture. When chocolate is ready, cut the heat, add sugar and mix well.
Add each egg one after the other and mix again. Add almond powder, mix well. Divide the mixture between the muffin cups, do not fill them completely (leave ½ cm from borders).
Place cups or mold in oven (to obtain perfect muffins, it is important not to pre-heat the oven).
Bake chocolate muffins for 19 to 20 minutes, at 200°C (in convection oven) or 20 to 21 minutes (in traditional oven).
Remove muffins from oven and let them cool for at least 15 minutes. Remove muffins from cups or molds.

To suit your taste, have fun changing “Chocolate Parisian Tiles” in the recipe.
For hazelnut muffins, choose “Chocolate Parisian Tiles” with caramelized bits of hazelnuts, for all milk “Chocolate Parisian Tiles” choose milk chocolate only.
We also tested our recipe using “Chocolate Parisian Tiles” with orange peels, a pure moment of greedy happiness!
Reasonable gourmets will add Tahitian vanilla ice cream to their muffin. Unreasonable gourmets will choose to pour some warm homemade chocolate sauce to their muffin and ice cream.
