Summer Recipe of ROY chocolatier : White Chocolate Mousse, Red Fruits and Crumble

Strawberries, raspberries, peaches, sweet weather and sun: summer is showing the tip of its nose ! It makes all of us very happy ! Yes summer is here, but chocolate does not have to be kept in our cupboards. ROY chocolatier loves also white chocolate. Sweet and unctuous, it goes perfectly with seasonal fruits.

Dessert White Chocolate and Red Fruits

It is time for you to bring barbecues out, invite your friends and prepare them fresh and homemade desserts. Really easy to realize, here is our white chocolate mousse with its raspberries sauce and crumble. Your chocolate mousse will be better if you prepare it the day before. It will be kept in the fridge.

Ingredients:

  • 6 mini glasses
  • 200 g of white chocolate (2 bars)
  • 10 cL of cream
  • 1 tablespoon of sugar
  • 4 eggs
  • 100 g raspberries (you can also use strawberries or peaches)
  • 1 vanilla pod
  • 30 g of “Speculoos” biscuits
  • 30 g of butter
  • 2 tablespoons of brown sugar

Prepare the White Chocolate Mousse

Put in a water bath the white chocolate. Have it melt over low heat. Add the cream, mix and leave the mixture. Cut the vanilla pod and take the beans off. Add them to the white chocolate. In a bowl, separate egg yolks from the white eggs. Whip the egg whites until firm. Mix the egg yolks with sugar until mixture is creamy. Add white chocolate and cream to the egg yolks. Mix. Add slowly the white chocolate to the white eggs, don’t stir too much, the mixture must be creamy. The mousse is ready, leave it in the fridge.

Prepare the Raspberries Sauce

Mix the raspberries and add some sugar if they are not sweet enough. Take off some juice to obtain a thick sauce.

Prepare the Crumble

Crush the “Speculoos” and mix them with the sugar. Melt the butter in micro wave. Mix it with the “Speculoos”. Prepare your mini glasses at the last moment. Place some crumble in the glasses. Cover with the raspberriers sauce. Add the white chocolate mousse. It is all set ! Leave your dessert in the fridge before enjoying it.

Your dessert is ready to be enjoyed. Treat yourself!
